I know many of you like myself are adopting healthier lifestyles and trying to get to your summer weight goal. I have turned up my workout routine by now incorporating an off the hook circuit boxing class and a two hour cardio class to my three times a week that I spin....YES I am turned up. I added these new classes exactly a month ago, and I weighed in this morning and I am down 8lbs. I am a little disappointed because my goal is to lose 12lbs a month..but oh well. I am trying to looks the positives and not let the number on the scale be a downer (easier said than done though..LOL) My endurance has increased, my waist is smaller, and believe it or not I can see a small difference in my thighs. Today I am sharing one of my recipes that is delicious, filling, carbohydrate and calorie friendly. Total Calories for the above picture is 425 and takes about 25 minutes to make, Enjoy!
INGREDIENTS:
1lb of organic lean ground turkey
1 packet of Lipton Onion Soup Mix
1 small tomato
1 head of romaine lettuce
1/4 cup of diced bell pepper
1/4 cup diced onion
1/4 cup of chicken broth
1tbsp of poultry seasoning, black pepper
frozen sweet potato fries
extra virgin olive oil
slice of cheese (optional)
Saute bell pepper and onion in EVOO and set aside. Combine ground turkey, soup mix, seasonings, 1/4 cup of chicken broth, and sauteed vegetables into mixing bowl and mix well.
Once your done mixing ingredients, Form ground turkey into patties.
Cooked on medium heat. COVERED until done ( Covering the skillet keeps the burgers moist).
While the burgers are cooking prep your lettuce buns, slice tomatoes and prepare fries according to package directions.
I bake mine until crispy instead of frying.
Once burgers are done. Trim lettuce leaves down to desired size and create your burger with your desired toppings. I added sliced jalapenos tomatoes, a slice of havarti cheese and a small amount of ketchup and mustard....YUM!
